While much of the umami and amino acids dissolve out when making stock, the niboshi itself still retains nutrients such as calcium, iron, vitamin D, and protein. By eating the spent niboshi as is, turning it into furikake or tsukudani, or reusing it as an ingredient in cooking, you can take in its nutrition without waste. What to prepare
- Niboshi (dried baby sardines)
* For fresh niboshi, we recommend soaking them in water the day before

Use the niboshi you have at home.

The spent niboshi (dashigara) left after making stock can also be used.
Regular kibinago can also be used. Cut it to a size that fits nicely on the back. Chicken tenderloin and fish fillets are also effective.
